Zucchini Pasta and Garlic Shrimp

Tying our hand at alternatives for Pasta has been fun!  For this recipe, you can use a spiralizer, which you can get for about $20.00.  How much garlic is used for the shrimp depends on your preference!  This recipe serves 2
Per Serving:  Calories: 264  Fat:10 g  Protein: 30  Carbs 20g

Ingredients:
300g Frozen Shrimp, thawed and de-tailed
1 medium Zucchini, 
2 Roma Tomatoes, diced
4 White Mushrooms, diced
1/2 of a Red Pepper, diced
3 cloves Garlic, minced (or more!)
1 tbsp Olive Oil
2 tbsp Parmesan Cheese (optional)
Salt and Pepper to taste
1/2 tbsp Italian Seasoning


Directions: 
1.  Spiralize the zucchini to make the "Pasta"
2.  Add half of the olive oil to a frying pan, add the garlic and cook for 1-2 minutes, add the shrimp, Italian seasoning, salt and pepper, cook shrimp thoroughly and remove from pan.
3.  Add the remaining olive oil to the pan, add the peppers and mushrooms and cook for a couple minutes until starting to get soft.  Then add the tomatoes and zucchini.  Cook until zucchini is still slightly firm but cooked.  Add salt, pepper and Italian seasoning.
4.  Top with Shrimp and parmesan cheese if desired!
