Veggie Tortillas

Who says you can't have tacos while eating healthy?  Try this recipe for a great tasting and healthy tortilla that easily fits into your calories and macros!
Per tortilla: Calories: 62  Fat: 1g Protein: 5g  Carbs: 13g


Ingredients:
1 small head of Cauliflower
1 medium Zucchini
2/3 cup Raw Oat Bran
2 egg whites
1 tsp salt
1 tsp pepper
1 tsp Garlic Powder




Directions: 
1. Preheat oven to 400F.  Chop the cauliflower and zucchini into 1-inch pieces and place in microwavable bowl.  Microwave for 3 mins until soft.
2. Allow cauliflower and zucchini to cool, then blend in a blender or food processor until baby food consistency.  
3. Transfer blended veggies into a bowl, mix in egg whites, spices and oat bran.
4. Line a baking sheet with parchment paper and spray with baking spray.  Make tortillas approx 4-5 inches wide and approx 1 cm thick.  
5. Bake in the oven for 15-20 minutes, flip carefully and finish baking for another 10 mins.  Allow to cool completely on a wire rack before using.  Enjoy with shredded chicken, fish or shrimp!
