Veggie Stuffed Zucchini

Side dishes don't have to be boring!  This great side dish is filled with tons of veggies, but is super tasty with a rich tomato sauce!
Per 1 stuffed Zucchini half: Calories 126 Fat 4g Carbs 14g Protein: 7.5g


Ingredients: 
2 zucchini, sliced in half lengthwise 
1 cup of grated cauliflower
1/4 cup parmesan cheese
1/2 cup chopped mushrooms
2 Roma Tomatoes
1 small can of Tomato paste
1/4 cup of Low Fat Cheddar cheese
1/2 cup of water
1/4 tsp salt
1/2 tsp pepper
1/2 tsp of garlic powder
1 tbsp Italian seasoning.

             

Directions: 
1. Pre-heat oven to 425F.  Slice zucchini in half, lengthwise.  Using a spoon, scoop out the seeds and insides until approx 1/4 inch is left on all edges.  Do not throw away the scooped out zucchini.
2. In a bowl, mix together the scooped out zucchini, cauliflower and mushrooms.  Microwave the mixture for 1-2 minutes to cook slightly.
3. Chop the Roma tomatoes and mix in with the tomato paste.  Stir the tomato mixture into the veggies, and add spices and water a little at a time until mixed together well.  Mix in the parmesan cheese.
4. Scoop the mixture into the zucchini halves and place on a baking sheet lined with tin foil or parchment paper.  Top with cheddar cheese
5. Bake in the oven for 15-20 minutes, then broil on high until cheese is melted.

Take this supplement, take this fat burner, drink this fit tea, do this detox.  Don't forget Vitamin, A, E, D, B1, B12, Glutamine, Creatine, etc.  Its insane the amount of pills and things that the fitness industry brings about. I am not one takes a bunch of supplements, fat burners or a bunch of vitamins and minerals.  There are several health and scientific evidence as to why I don't do that; but in short I just don't have the need to.  I am not a serious body building competitor, and it seems like a lot of effort to boot! I started reading into protein powders a little more lately because I knew I wanted valid information to wri
