Turkey Patties on Smashed Sweet Potato

This recipe does take a bit of prep time but is worth it in the end. Turkey Patties can be made ahead of time and frozen for later use.  Sweet potatoes are perfectly filling and fit into macros nicely!
Per Turkey Patty: Calories: 152 Protein: 21g  Fat: 6g  Carbs: 6g
Per 300g Sweet Potato: Calories: 258  Protein: 4.5g  Fat: 0.5g  Carbs: 60g


Ingredients:
Turkey Patties:
1 500g Package Extra-Lean Ground Turkey
1 egg
1/3 cup Oat Bran
1 tbsp Mustard 
1/4 onion, diced
2 garlic cloves, minced
Spice as desired.  Recommended are Chili Powder, Garlic Powder, Pepper and Salt.

1 sweet potato (approx 300g)
1/4 cup Diced onion (optional)
4 White Mushrooms, sliced (optional)




Directions: 
1. Combine All ingredients for turkey patties in a bowl.  Mix well and form into 5 patties about 3-4 inches wide.  Put in fridge for 20 minutes to chill.
2. Fry the patties in a pan with a bit of olive oil for about 4 minutes each side.  
3.  Wash and poke the sweet potato with a fork all over, bake in microwave for about 10 minutes or until soft.  Set aside to cool for a few minutes
5.  Once potato is cool enough to handle, slice in half and flatten both sides with a meat pounder.  Sprinkle salt and pepper on it and fry in a frying pan with a bit of olive oil for 4 minutes each side.  
6.  Once the patties are done, fry the onion and mushrooms in a pan until soft.
7.  Layer the onion, mushrooms and Turkey patties on a whole sweet potato or just a half.  Top with spinach and a small amount of cheese or low sugar bbq sauce if desired.
