Stuffed Turkey Breast

This is a great recipe for when you feel like having something different that seems fancy, but is actually easy and healthy!
Per 100g serving: Calories: 220  Protein: 32g Fat: 9g Carbs: 3g


Ingredients:
2 turkey breasts 
Filling:
2 tbsp Mustard
1 tbsp Low-Calorie Miracle Whip
1 cup Raw Spinach, chopped
1/4 cup Grated Parmesan Cheese
1 Tbsp Olive Oil
1 tbsp Italian Seasoning
Salt & Pepper as Desired.

                         

Directions:

1. Preheat oven to 375F.  Pound out turkey breasts until approx 1.5 inches thick.
2. Slice a hold with a knife into the thickest part of the breast, do not cut all the way through.  Use your hands to make the hole larger.
3. Mix in a bowl the chopped spinach, mustard, miracle whip, olive oil and half of the spices.  Add additional seasoning if desired.
4. Stuff each breast with half of the spinach mixture.  Next, roll the turkey breast up and tie together with meat string.  You can also use toothpicks, just remember how many you used!
5. Season the outside of the turkey breast with the rest of the Italian seasoning and salt/pepper.
6. Heat some olive oil in a pan on stove top on medium-high.  Put the turkey breasts in the pan and sear until brown on all sides.  (should take about 5-7 minutes in total)
7. Cover and transfer the pan (make sure is oven safe if not put into an oven-safe dish) into the oven and bake at 375F for 40-45 minutes until the turkey reaches the appropriate temperature on a meat thermometer.  Allow to rest before slicing.
