Spicy Italian Turkey Muffins

These make a great and easy recipe for any day.  This recipe can also be rolled into meatballs and would make a great appetizer for a gathering.  This recipe makes one dozen "muffins" 
Per 1 Muffin: approx 90 Calories Protein: 10g


Ingredients:
500g of Ground Turkey
1/3 cup of Diced Onion
3 minced Garlic cloves
2 eggs (1 whole egg and 1 egg white)
1 cup of Oat Bran
1/4 cup of Salsa (any heat!)
1/2 tsp of Black Pepper
1/2 tsp of Paprika
1/2 tsp of Ground Coriander
1 tbsp of Italian Seasoning
Pinch of Cayenne Pepper


Directions:
1.  Preheat oven to 375F
2.  Combine ingredients together in a large bowl and mix well
3.  Line a muffin tin with tin foil or parchment paper in each individual hole and spray with cooking spray
​4.  Fill each with turkey mixture to the top
​5.  Bake at 375F for 30-35min
