Oatmeal Brownie Muffins

Do you have a craving for some chocolatey goodness? Or want to jazz up plain oatmeal muffins? Give this recipe a try!  
Great for pre-workout energy, or just to satisfy a chocolate craving!
Per Muffin: Calories: 90 Carbs: 12g Fat: 2.6g Protein: 5.7g



Ingredients:
4 egg whites
1 whole egg
1 cup Non-Fat Greek Yogurt
2 tsp Vanilla extract
1/2 tbsp stevia
1.5 cups dry Oatmeal
1/4 cup Cocoa Powder
1 tbsp baking powder
4 pieces Unsweetened Bakers Chocolate
1/2 cup Unsweetened Almond Milk
2 tbsp Honey

Directions:
1. Preheat oven to 325F.  Put all 4 egg whites into a large bowl.  Beat the egg whites with an electric mixture on high for 3-5 minutes until they become fluffy with stiff peaks.
2. Mix in the whole egg, yogurt, vanilla extract and stevia.  Mix until smooth.
3. In a separate bowl, combine oatmeal, cocoa powder, and baking powder.  Slowly mix into wet ingredients 1/3 at a time until thoroughly combined.
3. Cut up the bakers chocolate into small pieces and put into a small, microwavable bowl.  Add in almond milk and melt in microwave and mix until smooth.  Add honey in.  Pour into the rest of the ingredients.
4. Fill a muffin tin sprayed with baking spray until each is about 2/3 full.
5. Bake at 325F for about 20-25 minutes.  Allow to cool on a cooling rack.
