Garlic & Herb Roasted Chicken

Don't be afraid of cooking a whole chicken.  This recipe keeps it simple and delicious.  Make for your weekly meal prep or a Sunday night dinner.  
Remove the skin to decrease fat and calories, but don't worry, it will be very juicy and tasty!


Ingredients: 
1 whole chicken (neck and giblets removed)
1/2 onion, chopped
6 Garlic cloves (or less depending on your tolerance) 3 sliced and 3 minced
1 tbsp Italian seasoning
1 tbsp Rosemary (dried or fresh)
2 tsp Poultry seasoning
1 tsp Salt
1 tsp Pepper
2 Tbsp Olive Oil
1 tbsp Lemon Juice


Directions: 
1. Preheat oven to 375F.  Rinse Chicken to get all the leftover feathers, etc off and pat dry with a paper towel.
2. Combine the minced garlic, spices, olive oil and lemon juice.  Mix together well.
3. Cover chicken all over with the herb and olive oil mixture.  Put in a roasting pan and add half of the sliced garlic and onion inside the bird.  The rest can go all over the chicken for added flavour.
4. Roast uncovered for 45 min in oven, then cover for the remaining 20-25 ins until the internal temperature reaches 170F.  Allow to rest covered with tin foil for 10 mins before carving.
