A great, healthy alternative to regular pizza crust. So you can have your pizza and eat it too! The recipe makes 1 medium Pizza Crust (feeds 1-2 people)

Ingredietns:
1 small head of cauliflower
1 egg white
1 whole egg
1/3 cup Oat Bran
Favourite pizza toppings
Directions:
1. Preheat oven to 425F. Grate Cauliflower or process in food processor until finely grated. Cover in a bowl and microwave on high for 3 minutes until cooked.
2. Set aside to cool for 10 minutes. Once it is cool enough to handle, squeeze out excess moisture from cooked cauliflower with either a towel or cheesecloth.
3. Once cauliflower is cooked, add eggs and slowly add oat bran (you may not need all of it, just enough to help keep the mixture together). The "dough" mixture should be quite wet from the eggs.
4. Press crust "dough" onto a baking sheet lined with parchment paper sprayed with cooking spray or a bit of olive oil. Press out dough until about half a cm thick.
5. Bake in the oven for 20 minutes.
6. Add favourite toppings and bake for another 5-10 minutes until cheese is bubbly! Enjoy!
