Burrito Omelette

A delicious and healthy breakfast burrito omelette is a great way to start your day.  This breakfast is full of protein and fibre to keep you full and energized!
Per 1 Omelette: Calories 259   Fat: 8g  Protein: 23g   Carbs:21g


Ingredients: 
2 egg whites
1 whole egg
1/2 cup chopped spinach
1/2 cup Chopped Pepper (any color)
1/4 cup black beans (drained & rinsed)
1/2 oz shredded light cheddar cheese
2 tbsp salsa
Salt & Pepper to Taste

Other optional ingredients: Mushrooms, avocado, tomatoes, turkey sausage or bacon, etc.


Directions: 
1. Mix together the egg whites and whole egg in a bowl.  Add salt, pepper and other desired spices.
2. In a medium-sized pan sprayed with cooking spray, heat on medium heat.  Pour egg contents in.  Cover and allow to cook for 3-4 mins until the bottom is cooked.
3. Using a spatula, slowly and carefully flip the eggs over.  Layer omelette ingredients in the center, excluding salsa.  Cover with a lid for a minute to allow cheese to melt.
4. When the bottom is finished cooking, carefully fold down the sides over the toppings and press down with the spatula to seal it shut.
5. serve with salsa and enjoy!
