Banana Chocolate Chip Protein Muffins

A healthy and higher protein version of basic banana chocolate chip muffins.
This recipe makes approx 12 muffins
Per muffin: Calories 144 Protein: 12g Carbs: 22g Fat: 3g


Ingredients:
2 medium-sized bananas
1/2 cup black beans (drained & rinsed)
1/2 cup fat-free cottage cheese
1 whole egg
2 egg whites
1/3 cup whole wheat flour
1/2 cup raw Oat Bran
3 scoops of chocolate protein powder
1 tbsp stevia
1 tbsp baking powder
1/2 cup Krisda sugar-free chocolate chips 

Directions:
1. Preheat oven to 325F.  Combine bananas, black beans and cottage cheese in a blender and blend until smooth.  Pour into a large mixing bowl
2. Mix in the egg and egg whites and combine with an electric mixer until smooth.
3. In a separate bowl, mix together the flour, oat bran, protein powder, stevia and baking powder.  Add slowly 1/3 at a time to the wet ingredients, mixing thoroughly until all combined.
4. Add in chocolate chips and mix together.  Pour batter into a muffin tin sprayed with cooking spray until each is about 2/3 full.
5. Bake at 325F for 20-30 minutes.  Allow to cool on a cooling rack.
