Protein Pancakes

A super easy breakfast for any regular day or on the weekend.  The same batter can be used to make waffles as well!  This recipe makes 4 large pancakes that are full of fibre and protein.  Tastes great with a tablespoon of Plain Greek Yogurt mixed with no sugar added jam or sugar-free syrup!

Ingredients: 
- 2 egg whites
- 1 banana
- 1 scoop protein powder (vanilla or chocolate)
- 1 tsp of Stevia
- 1/2 cup Oat Bran
- 1 tsp Baking Powder
- 1 cup Almond Milk
- 1 tsp Cinnamon
- 1 tbsp Vanilla Extract

Directions: 
1. Beat egg whites and banana together with an electric mixer.
2. Mix in the remaining ingredients with 1/2 of the almond milk.  Add more Almond milk as needed.
3. Spray a pan with cooking spray and warm on medium heat.  Pour batter into hot pan and cook until pancake starts to bubble around the edges and can easily lift out of the pan.  Flip and cook on the other side.
4. Top with desired toppings and enjoy!
